Why I Switched to a Plant-Based Diet

When I first started exploring plant-based eating, I wasn’t sure what to expect. I had grown up on traditional meals—heavy, comforting, and loaded with meat and dairy. But after facing my own wake-up call with heart health, I knew something had to change.

Then one day, I had a raw vegan pizza. It was fresh, flavorful, and unlike anything I had tasted before. The real turning point? My son—who was just 3 years old at the time—devoured it. Now he’s 10 and still loves it. That moment shattered my belief that healthy food had to be boring or bland. It was the beginning of my journey to healing.

  • ¼ red onion, diced

  • Juice of 1 lemon

  • Sea salt and pepper

Instructions: Mix all ingredients in a large bowl. Chill and enjoy!


2. Lentil Veggie Soup

Ingredients:

  • 1 cup lentils

  • 1 onion, chopped

  • 2 carrots, diced
